- 1 pkg. dried great northern beans
- 1 ham hock OR big chunks of ham
- 2 cups coarsely chopped onions
- salt, pepper, dash of cayenne
- 3 medium potatoes, peeled and cut into cubes
- Rinse beans well, bring to boil.
- Pour into colander and rinse well. (Removes some of the 'gas'.)
- Cover with fresh water, return to boil.
- Add ham hock, onions, and seasonings. Cover and cook over medium heat.
- When beans are fork-tender, add potatoes. Cook at low boil until potatoes are tender.
- Remove a cup or two of beans only, mash them and return to pot. Stir well to thicken bean soup.
- Allow to simmer till CORNBREAD is ready!
