My Mom's Bean Soup
  1. Rinse beans well, bring to boil.
  2. Pour into colander and rinse well. (Removes some of the 'gas'.)
  3. Cover with fresh water, return to boil.
  4. Add ham hock, onions, and seasonings. Cover and cook over medium heat.
  5. When beans are fork-tender, add potatoes. Cook at low boil until potatoes are tender.
  6. Remove a cup or two of beans only, mash them and return to pot. Stir well to thicken bean soup.
  7. Allow to simmer till CORNBREAD is ready!
