- 1 stick (1/2 cup) butter or margarine, softened
- 1 cup sugar
- 2 eggs, slightly beaten
- 1 Tbsp vanilla
- 3/4 cup chopped pecans
- 1/4 tsp salt
- 1 tsp baking soda
- 2 cups all-purpose flour
- 3 ripe, mashed bananas
- Cream sugar and butter; add eggs, bananas, flour, salt, and baking soda. Add nuts last.
- Pour into greased loaf pan and bake 1 hour and 10 minutes at 350°. Test center for doneness.
- Cool before slicing.
Freezes well.
NOTE: If making mini-loaves, bake 45 minutes.(Cotton)
