- 2 cups flour
- 1 1/2 cups sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 eggs
- 2 small bananas, mashed (approx. 3/4 cup)
- 1/2 cup oil
- 1 tsp vanilla
- 3/4 cup sour cream
- 1/2 cup chopped nuts (opt.)
- Preheat oven to 350°.
- In a large bowl, mash the bananas with a fork. Add eggs, sugar, oil and sour cream. Mix well.
- In another bowl, blend together flour, baking powder and soda, and salt. Add to banana mixture and stir in by hand.
- Stir in vanilla and add nuts if desired.
- Pour into greased and floured cake tin. Bake at 350° for 35 minutes.
- Cool completely on a wire rack before frosting.
Peanut butter frosting goes really well with this cake.
