Banana Cake
  1. Preheat oven to 350°.
  2. In a large bowl, mash the bananas with a fork. Add eggs, sugar, oil and sour cream. Mix well.
  3. In another bowl, blend together flour, baking powder and soda, and salt. Add to banana mixture and stir in by hand.
  4. Stir in vanilla and add nuts if desired.
  5. Pour into greased and floured cake tin. Bake at 350° for 35 minutes.
  6. Cool completely on a wire rack before frosting.

Peanut butter frosting goes really well with this cake.
