Candy Apple Salad

This is really a great treat salad...it taste almost like Carmeled Apples. It makes a nice side dish on a hot afternoon.

  1. 6-8 Granny Smith apples (cored, with skins on, cut into bite sized peices.)
  2. 1 1/2 cups dry roasted, unsalted peanuts, chopped
  3. 16 oz crushed pineapple, well drained
  4. 8 oz Cool Whip Lite
    1. Combine above ingredients in large mixing bowl, set in refrigerator.
    • 1 cup sugar (or 12 packets Sweet-N-Low and 1 cup water)
    • 2 eggs
    • 2 Tbsp Apple cider vinegar
    • 2 Tbsp cornstarch
    1. Mix together in a medium saucepan and bring to a boil over medium heat, stirring constantly, until mixture thickens to pudding consistancy. (It may turn brown and appear to be burning - this is normal.)
    2. Add mixture to apple mixture, stirring well.
    3. Refrigerate for 2 hours before serving.
