This is really a great treat salad...it taste almost like Carmeled Apples. It makes a nice side dish on a hot afternoon.
- 6-8 Granny Smith apples (cored, with skins on, cut into bite sized peices.)
- 1 1/2 cups dry roasted, unsalted peanuts, chopped
- 16 oz crushed pineapple, well drained
- 8 oz Cool Whip Lite
- Combine above ingredients in large mixing bowl, set in refrigerator.
- 1 cup sugar (or 12 packets Sweet-N-Low and 1 cup water)
- 2 eggs
- 2 Tbsp Apple cider vinegar
- 2 Tbsp cornstarch
- Mix together in a medium saucepan and bring to a boil over medium heat, stirring constantly, until mixture thickens to pudding consistancy. (It may turn brown and appear to be burning - this is normal.)
- Add mixture to apple mixture, stirring well.
- Refrigerate for 2 hours before serving.
