- 3 eggs
- 1 cup oil
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- 1 tsp salt
- 1 tsp vanilla
- 2 cups sugar
- 3 cups all-purpose flour
- 3 cups peeled, chopped apples
- 2 cup chopped pecans
- 2 cups chopped dates
- Beat eggs well and add sugar and oil.
- Add dry ingredients, alternating with apples, nuts, dates.
- Bake at 325° for 1 to 1 1/2 hours (test for doneness) in tube pan which has been heavily greased and floured.
This is a very stiff batter, as there are NO liquids. Top of cake is hard and crusty - inside is very moist. Dust with powdered sugar.
