- 2 (10 oz) containers low-fat, small curd cottage cheese
- 2 (8 oz) light cream cheese or neufachtel, softened
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1/4 cup Amaretto
- 6 egg whites
- 1 pkg chocolate wafers, crushed (about 2 cups)
- 3 Tbsp Amaretto
- 1/2 cup finely chopped pecans
- Spray springform pan with cooking spray.
- Mix cookies with pecans and the 3 tablespoons of Amaretto. Spread half the mixture into bottom of pan. Set aside.
- Mix cottage cheese, cream cheese, sugar, brown sugar and 1/4 cup Amaretto. Blend or mix until smooth. Add four egg whites and continue mixing until smooth. Stir in 1/4 of crumb mixture. Beat other two egg whites until stiff. Fold into mixture.
- Pour over crust in pan. Bake at 325° for 35-40 minutes, until almost firm.
- Cool 15 min. Sprinkle remaining 1/4 of crumb mixture over top and chill several hours before serving.
