Amaretto Cheesecake (Low Fat)
  1. Spray springform pan with cooking spray.
  2. Mix cookies with pecans and the 3 tablespoons of Amaretto. Spread half the mixture into bottom of pan. Set aside.
  3. Mix cottage cheese, cream cheese, sugar, brown sugar and 1/4 cup Amaretto. Blend or mix until smooth. Add four egg whites and continue mixing until smooth. Stir in 1/4 of crumb mixture. Beat other two egg whites until stiff. Fold into mixture.
  4. Pour over crust in pan. Bake at 325° for 35-40 minutes, until almost firm.
  5. Cool 15 min. Sprinkle remaining 1/4 of crumb mixture over top and chill several hours before serving.
