- 1 cup margarine or butter, softened
- 1 cup brown sugar, firmly packed
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp vanilla
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt (opt.)
- 3 cups quick or old fashioned oats (uncooked)
- 1 - 2 cup raisins
- Preheat oven to 350°F.
- Beat together margarine and sugars until creamy. Add eggs and vanilla; beat well.
- Combine flour, baking soda, cinnamon and salt separately. Add to butter mixture and blend well.
- Stir in oats and raisins; mix well.
- Drop by rounded teaspoons onto ungreased cookie sheets.
- Bake 10 to 12 minutes or until golden brown.
- Cool 1 minute on cookie sheet; remove to wire rack.
- For Bar Cookies: Bake 30-35 minutes in ungreased 9 x 13" metal baking pan.
