Tomato au Gratin
  1. Preheat Oven to 350°F.
  2. Cut tomatoes in half and squeeze out seeds.
  3. Sprinkle with 1/2 tsp salt and turn upside down on rack for 20 minutes to drain.
  4. Place on broiling pan cut-side up and brush with 3/4 tsp of oil. Sprinkle with remaining salt, pepper, garlic and parsley, breadcrumbs and cheese. Brush lightly with remaining olive oil.
  5. Cook in preheated oven for 5 minutes. Brown lightly under broiler and serve.
