Girl Scout Thin Mint Cookies
  1. Preheat oven to 400°F.
  2. Combine cake mix, eggs, water, cooking oil, and cocoa. Blend together well. (This will be a very sticky mess.)
  3. Let stand for 20 minutes, and then shape into very small 1/2" balls. Place balls on a cookie sheet 2 inches apart and press flat flat. (Use a large spoon sprayed with Pam to press them.)
  4. Bake about 8 minutes and cool to room temperature.
  5. Heat chocolate chips in either the microwave, or in a double boiler. When completely melted add a few drops of the mint flavoring. (Be careful not to add too much, it is a powerful flavoring.)
  6. Either spread the melted chocolate on the cookies, or dip the cookies into the chocolate.
