- 4 chicken breasts, boneless and skinless
- Oil
- 1 cup onion, chopped
- Red and/or green bell pepper, chopped (to taste)
- Mushrooms, chopped (to taste)
- 1 pkg (12 oz) thin egg noodles
- 1 cup grated cheddar cheese, divided
- Cut chicken breasts into 3 strips. Brown in small amount of oil.
- Remove chicken, and sauté onion, peppers and mushrooms in the oil.
- Cook egg noodles until al dente, drain well and mix with sautéed vegetables.
- In a sprayed baking dish, put the noodles and vegetables. Sprinkle with 1/2 cup grated cheddar cheese.
- Put browned chicken strips on top (push down into noodles slightly), and sprinkle with another 1/2 cup cheese.
- Bake (375°F?), uncovered, for 25 minutes.
