- 6-8 small to medium-small yellow squash
- 3 Tbsp butter
- 1/4 cup real bacon bits
- 1/2 cup chopped onion
- Salt, cayenne, garlic powder to taste
- 1 cup seasoned or plain breadcrumbs
- 1/4 cup grated cheese (opt.)
- Slice squash lengthwise and put into pot of boiling water. Cook until fork-tender, about 10 minutes. Drain, cut-side down, on paper towels.
- Meanwhile, in a small skillet, melt butter; add onion, bacon bits and seasonings. When onions are tender, add breadcrumbs and cheese (if using). Scoop out insides of squash and add to mixture.
- Fill squash shells with mixture. Add additional bread crumbs to top and dot with butter. Put into baking dish and bake, uncovered, for about 15 minutes, until lightly browned and heated through.
