- 1 lb small red ("new") potatoes
- 1 Tbsp olive or vegetable oil
- 1/2 tsp salt
- 1/8 tsp pepper
- 2 Tbsp grated Parmesan or Romano cheese
- Cut potatoes (skin on) into 1/4" thick slices; toss with oil. Place in a single layer in a sprayed baking pan.
- Sprinkle wiht salt, pepper and Parmesan. Cover tightly with foil and bake at 350°F for 40 minutes.
