This is my very favorite cake. I never frost it, that takes away from the cake I think. I put a little powdered sugar on top sometimes and I think a spoonful of whipped topping adds to it especially if you are serving to guests.
- 4 cups peeled, diced apples (sprinkle with lemon juice to prevent browning)
- 2 cups flour
- 3/4 - 1 cup sugar
- 1 tsp salt
- 1 1/2 tsp baking soda
- 2 eggs
- 2 tsp cinnamon
- 3/4 cup oil
- 2 tsp vanilla
- Chopped nuts as desired
- Combine flour, sugar, salt, baking soda and cinnamon. Stir in eggs and oil.
- Stir in apples, nuts and vanilla.
- This makes a very thick batter and needs to be spread around in a 9 x 13" pan with the back of a spoon.
- Bake at 325°F until center springs back when touched.
