Pumpkin Bars with Orange Glaze
  1. Cream the butter and sugar together until light and fluffy.
  2. Add beaten egg and pumpkin. Beat well.
  3. Sift all dry ingredients together. Add the dry ingredients to the pumpkin mixture and then add the dried fruit and walnuts and mix well.
  4. Spread the mixture evenly in a greased shallow 7 x 11" baking tin.
  5. Bake at 325°F for about 30 minutes or until the mixture starts to shrink from sides of tin.
  6. To make the Orange Glaze, sift the icing sugar, add to orange juice and rind and mix to a spreading consistency. Glaze the bars while still warm.
  7. Allow bars to cool before into squares.
