- 4 qts boiling water
- 3/4 tsp salt
- 1 lb noodles (preferably homemade)
- 1/4 lb butter, room temperature
- 1/4 lb Parmesan cheese, freshly grated
- 1/4 cup heavy (whipping) cream, warmed
- Freshly ground pepper to taste
- Place a large pot with the water over high heat. Add the salt. Bring the water to a boil.
- When the water is boiling turbulently, add the noodles, separting them with a long-handled fork. (Homemade noodless take one-quarter of the time to cook than store-bought noodles.)
- Place the pan or bowl you will mix the pasta in over the pot.
- When the pasta is cooked to your liking, drain approximately 98% of the water.
- Place the noodles in the preheated pan or bowl along with the butter. Stir gently until the butter is melted, adding half of the cheese and half of the cream.
- Continue to mix, and add the remainder of the cheese. If more moisture is needed, add the rest of the cream.
- Stir for a few seconds and serve, adding freshly ground pepper.
