Lemon Pie
  1. Mix cornstarch, sugar, and salt in top of double boiler. Add water and mix well. Cook until thickened.
  2. Add beaten egg yolks and return to heat; cook about 2 minutes longer.
  3. Remove from heat and add butter, lemon juice and rind. Let cool and pour into baked pie shell.
  4. Beat egg whites stiff, gradually adding 6 tablespoons sugar. Pile on top of pie.
  5. Bake at 300° about 10 minutes, until lightly browned. Watch carefully so it doesn't burn.
