- 5 Tbsp cornstarch
- 2 cups water
- 1 cup sugar
- 1/4 tsp salt
- 3 large eggs, separated
- 2 Tbsp butter
- 5 Tbsp fresh-squeezed lemon juice
- 2 tsp grated lemon rind
- 1 nine-inch baked pie shell
- Mix cornstarch, sugar, and salt in top of double boiler. Add water and mix well. Cook until thickened.
- Add beaten egg yolks and return to heat; cook about 2 minutes longer.
- Remove from heat and add butter, lemon juice and rind. Let cool and pour into baked pie shell.
- Beat egg whites stiff, gradually adding 6 tablespoons sugar. Pile on top of pie.
- Bake at 300° about 10 minutes, until lightly browned. Watch carefully so it doesn't burn.
