- 3 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 2 cups sugar
- 1 tsp cinnamon
- 3 eggs, beaten
- 1 cup oil
- 1 1/2 tsp vanilla
- 1 can (8 oz) crushed pineapple with juice
- 1 cup chopped pecans
- 2 cups chopped bananas
- Combine flour, soda, salt, sugar and cinnamon in large bowl.
- Add eggs and oil, stirring until dry ingredients are moistened. Do not beat.
- Stir in vanilla, pineapple, juice, pecans, and bananas.
- Pour batter into 3 greased and floured 9" round cake pans. Bake at 350°F for 25-30 minutes or until toothpick in center comes out clean.
- Cool in pans 10 minutes; remove from pans, and let cool completely on wire racks.
Cream Cheese Frosting
- 1 pkg (8 oz) cream cheese, softened
- 1 stick (1/2 cup) butter or margarine, softened
- 1 pkg (16 oz) confectioner's powdered sugar
- 1 tsp vanilla
- Combine cream cheese and butter, beating until smooth.
- Add confectioner's sugar and vanilla; beat until light and fluffy.
- Spread frosting between layers and on top and sides of cake; then sprinkle 1/2 cup chopped pecans on top.
