Hummingbird Cake
  1. Combine flour, soda, salt, sugar and cinnamon in large bowl.
  2. Add eggs and oil, stirring until dry ingredients are moistened. Do not beat.
  3. Stir in vanilla, pineapple, juice, pecans, and bananas.
  4. Pour batter into 3 greased and floured 9" round cake pans. Bake at 350°F for 25-30 minutes or until toothpick in center comes out clean.
  5. Cool in pans 10 minutes; remove from pans, and let cool completely on wire racks.

Cream Cheese Frosting
  1. Combine cream cheese and butter, beating until smooth.
  2. Add confectioner's sugar and vanilla; beat until light and fluffy.
  3. Spread frosting between layers and on top and sides of cake; then sprinkle 1/2 cup chopped pecans on top.
