- 1 can (11 oz) mandarin oranges
- Water
- 1 cup instant rice, uncooked
- 1 can (8 oz) crushed pineapple
- 1/2 cup cucumber, chopped
- 1/3 cup red onion, chopped
- 3 Tbsp fresh mint, chopped
- Drain juice from the mandarin oranges into a measuring cup and add water to make 1 cup. Pour into a pan.
- Bring to boil; stir in 1 cup uncooked instant rice. Remove from heat, cover and let stand for 10 minutes.
- Stir together cooked rice, drained mandarin oranges, pineapple with juice, cucumber, onion and mint in medium serving bowl.
- Serve at room temp or chilled.
