Minted Fruit Rice Salad
  1. Drain juice from the mandarin oranges into a measuring cup and add water to make 1 cup. Pour into a pan.
  2. Bring to boil; stir in 1 cup uncooked instant rice. Remove from heat, cover and let stand for 10 minutes.
  3. Stir together cooked rice, drained mandarin oranges, pineapple with juice, cucumber, onion and mint in medium serving bowl.
  4. Serve at room temp or chilled.
