- 1 cut-up chicken or 4 large chicken breasts, boiled
- 3 eggs, hard-boiled and chopped
- 1 cup onion, finely chopped
- 2 cups celery, finely chopped
- 1 container (8 oz) orange yogurt
- 1/2 cup mayonnaise
- 1 small can mandarin oranges, drained
- 2 cups white seedless grapes
- Boil chicken in water with salt, pepper and a dash of cayenne. Add eggs to boil in same pot 15 minutes before the chicken is done.
- Allow to cool, then debone chicken shell the eggs. Cut into bite-sized chunks.
- In large bowl, stir together onion, celery, mayo and yogurt. Add chicken and eggs. Lightly stir in the orange slices and grapes.
- To serve: Using an ice cream scoop, put chicken salad on shredded lettuce which has been placed on a lettuce leaf. Garnish plate with carrot sticks, celery sticks, and ripe olives.
