Fiery Shrimp and Mango Sauce

This shrimp and green mango salad would serve well as the appetizer at a very special meal or as starter for a wedding supper or anniversary party.

  1. In a large bowl, whisk together rice vinegar, lime juice, honey, lime zest and hot pepper sauce.
  2. Whisking constantly, drizzle in sesame and vegetable oils until well combined.
  3. Stir in coriander, salt and pepper.
  4. Add shrimp, mango and onion to bowl; toss until well combined; taste and adjust seasoning if necessary.
  5. Place equal amounts of shrimp/mango mixture on each lettuce leaf.

Makes 8 servings.
