- 3 cups cooked rice
- 1 pkg frozen chopped spinach (may use broccoli)
- 1 cup shredded cheddar cheese
- 1 cup half n half cream
- 1/2 cup chopped onion
- 1 Tbsp butter
- 1 tsp salt
- Chopped or sliced mushrooms (optional)
- In a bowl, combine all ingredients; transfer to greased baking dish.
- Cover and bake at 350° for 25-30 minutes or until heated through.
