Duchess Potatoes
  1. Mash potatoes while warm.
  2. Add yolks, one at a time. Add remaining ingredients.
  3. While still warm, put into pastry bag and pipe onto buttered and floured baking sheets in a circle, bringing the tip up to a point. Sprinkle lightly with a little additional cheese.
  4. Just before serving, brown lightly in a 400° oven.

Serves 4. (Can double recipe.)
