- 2 cups mashed potatoes (warm)
- 3 Tbsp butter
- 1/2 cup grated Swiss cheese
- 2 egg yolks
- 2 Tbsp heavy cream
- salt
- pepper
- dash of nutmeg
- Mash potatoes while warm.
- Add yolks, one at a time. Add remaining ingredients.
- While still warm, put into pastry bag and pipe onto buttered and floured baking sheets in a circle, bringing the tip up to a point. Sprinkle lightly with a little additional cheese.
- Just before serving, brown lightly in a 400° oven.
Serves 4. (Can double recipe.)
