All of us have great big fat cookbooks filled with "gourmet" recipes, but I would like to share with you a few quick and easy ideas. Nothing fancy, but these have been taste tested, and what's more important, dont call for anything you probably dont already have in the house. I will be adding to this collection on a regular basis, so grab a coffee and enjoy

CRAFTY'S PEANUT BUTTER COOKIES

1/2 CUP BUTTER.. 1/2 CUP PEANUT BUTTER (PLAIN OR CHUNKY).. 1/2 CUP WHITE SUGAR.. 1/2 CUP BROWN SUGAR.. 1 1/4 CUP A.P. FLOUR.. 1 EGG (WELL BEATEN).. 3/4 TSP BAKING SODA.. 1/2 TSP B.P. 1/4 TSP SALT..

Cream butter and peanut butter together. Add sugar gradually and cream. Add well beaten egg to mixture. Sift flour once before measuring, then sift again with soda, baking powder and salt. Add to peanut butter mixture and mix well. (CHILL) Then roll in small balls and place on UNGREASED cookie sheet (I like the air insulated ones). Press down with fork in criss cross pattern. Bake at 350F for approx. 15 min. Do NOT overbake.

Squash Pie

2 cups cooked & mashed squash 3/4 cup brown sugar 1/2 cup evaporated milk 2 beaten eggs 1 tsp each of cloves, nutmeg, cinnamon, (or to taste) 1/4 tsp salt 2 pie shells which have been partially baked

Blend all ingedients and put into pie shells. Bake at 450F for 15 min,, then reduce heat and bake at 350f for 25 min or til done

Quick Fish Chowder

1 14oz tin chicken haddie 2-3 med potatoes (cut up small) 2 good size onions 3 cups whole milk 1 cup evaporated milk 1 large carrot grated

Boil 1 onion and potatoe til potatoes are dont, but not soft. Drain. Heat milk then add fish, potatoes, and cooked onion, and the extra uncooked onion, and the grated carrot. Cook on medium heat for 5 min then add salt and pepper to tasts. If you wish, you can add other varieties of fish, but allow time for them to cook.

Salmon Patties

1 can of good quality salmon Take out the bones and add a beaten egg. Add one potatoe (mashed). Form into patties, roll in soft bread crumbs and fry in butter.

Nova Scotia Baked Beans (fat free version)

soak 1 lb yellow eye beans overnight in plenty of water. Next morning boil in same water for 2-3 hours or til the skins burst when you blow on them. Beans will not become more tender during baking, so ensure you boil them to desired tenderness. Drain beans but RESERVE the liquid. Add beans to a mixure of 1 - 1/2 cups molasses, 2 onions, 1 tsp dry mustard, 1 tomatoe if desired. Do not add salt til final few minutes of baking as this will toughen the beans. Put all ingredients in bean crock and fill to the top with some of the reserved liquid. Add more liquid during baking process if necessary. Bake at 350F for 3-4 hours. Remove cover from crock during last half hour to brown. A more traditional way to prepare this recipe is to add 4-6 small pieces of salt pork or bacon to the beans while baking. This is traditionally served with brown bread and chow chow pickles

Simple Ham Casserole

2-3 cups cut up cooked (leftover) ham 1 19oz tin cream corn 1 -2 large onions, chopped 1/4 cup green peppers 1-2 cups of any other left over veggies

Mix all ingred together and put in baking dish. Top with bread crumbs if desired. Bake at 350F til hot and bubbly.

Harvard Beets

4 large beets, cooked and diced into small squares 1 cup water 3 tbsp butter 3 tbsp flour 1 onion, chopped fine 3 tbsp sugar 4 tbsp lemon juice salt & pepper to taste

Mix all ingredients except beets in saucepan and boil together for 1-2 minutes Add to beets. Put in sterilized jars. Serve as side dish with any meat or poultry
