- Hot Chicken Curry -

A recipe I invented whilst in my first year of Uni. Very tasty!

 

Ingredients:-

  • 3-4 chicken breasts cut into cubes,
  • 1 can of chopped tomatoes,
  • 1/2 can of coconut milk (you can get this in almost all supermarkets, it usually comes in a purple can),
  • 1 clove of garlic finely chopped,
  • 1 thumb-sized piece of ginger grated,
  • 2 tablespoons mango chutney (OPTIONAL)
  • 1-2 tablespoons dried chill flakes (you can get these from chinese food shops, OPTIONAL),
  • 3 tablespoons hot curry powder (I use Sharwoods Hot Curry Powder),
  • 2 tablespoons cooking oil (any type will do),
  • Fresh coriander to garnish (OPTIONAL).

Recipe:-

1) Gently fry the garlic and the ginger in some oil for 2 minutes.

2) Add the curry powder and cook for 1 minute more.

3) Add the chicken, mix well so it's covered in the spices, and fry until brown.

4) Add the tomatoes, chilli flakes, and mango chutney. Stir well and simmer for 2 minutes.

5) Add the coconut milk, mix together thoroughly, and simmer for 30 mins, or until the mixture has thickened enough for your tase.

6) Garnish and serve with popadums. Yum!
