A Taste of History
Topic: Food
a taste of history, chef walter staib, the whitehurst blog, steven whitehurst

I am a history buff and I love food.  These two things come together in the tv program: A Taste of History with Chef Walter Staib.  I've often wondered about foods of the past, and if I'd find anything edible.  Chef Staib answers that question multiple times a week by preparing wonderful Colonial Era recipes, using authentic ingredients and cooking instruments.  A Taste of History is shown on RLTV (channel 487 on Comcast).

2. Steam asparagus until tender approximately 3 minutes.

3. Toast sourdough rounds

4. Heat crab meat in the oven on sizzler plate for approximately 3 minutes.

5. To serve, stack the ingredients as follows on serving plate. Toast on bottom, followed by asparagus, tenderloin medallions, crab and sauce on top. Serve immediately.

BEARNAISE SAUCE RECIPE

1/4 cup dry white wine

1/4 cup white-wine vinegar

1 small shallot, chopped
2 tablespoons chopped fresh tarragon
3 large egg yolks
1/2 cup (1 stick) unsalted butter, cut into 8 pieces
1 teaspoon fresh lemon juice
kosher salt and black pepper

Directions

  1. In a small saucepan, combine the wine, vinegar, shallot, and 1 tablespoon of the tarragon. Boil until the liquid is reduced to 2 tablespoons, 8 to 10 minutes.
  2. Strain the vinegar mixture through a fine-mesh sieve into a medium heatproof bowl. Whisk in the egg yolks.
  3. Set the bowl over (not in) a saucepan of simmering water and cook, whisking constantly, until the mixture has thickened to the consistency of mayonnaise, 3 to 4 minutes.
  4. One piece at a time, whisk in the butter until melted and smooth. Remove from heat and whisk in the lemon juice, the remaining tablespoon of tarragon, and ½ teaspoon each salt and pepper.

Pizzeria Due...Great Pizza For A Great City
Topic: Food
'We'll dish it out.'

Pizzeria Due is definitely worth the trip if you're anywhere near Chicago.  I had a stuffed pizza with double sausage, double pepperoni, mushrooms, onions, green peppers, and some other things.  It was marvelous!!!  Good crust, nice flavor to the meats and cheese, a sauce that is not overly sweet and very fresh ingredients.  I've lived in Chicagoland my whole life.  I was born in Chicago, and I know good pizza.  Pizzeria Due is Great Pizza!

Big
Topic: Food

If you love McDonald's Big Mac, but can't get to the restaurant or want to cook yourself, here's a sauce that should leave you pleasantly surprised.

BIG "SNACK":

2 ALL BEEF PATTIES, LETTUCE, CHEESE, ONIONS, PICKLES, SESAME SEED BUN

SAUCE:

1 CUP MIRACLE WHIP SALAD DRESSING

1/3 CUP CREAMY FRENCH DRESSING

1/4 CUP SWEET PICKLE RELISH

1 TBSP. SUGAR

1/4 TEASPOON PEPPER

1 TEASPOON DRY MINCED ONION

Stir all ingredients for sauce together with a spoon.  Makes 2 cups which will keep for a week in the refrigerator.

To make a Big "Snack," sear beef patties in a bit of oil.  Place patties on bottom halves of toasted sesame seed buns.  To each patty add a couple of tablespoons of sauce.  Add remaining ingredients and enjoy!

African Dishes: Kenya Style Greens In Lemon Sauce
Topic: Food

Sukuma wiki is popular in East African countries such as Kenya and Tanzania. The literal Swahili translation means to "push the week" or "stretch the week." It's a food used to stretch budgets while filling the belly.  Sukuma wiki has been eaten for over 2,000 years.  The dish combines kale, collards, or other greens, with tomatoes, onions, meat, lemon and spices.  If you like greens, this may be a fresh way to enjoy them.

African Dishes: Plantain And Coconut Beef Stew
Topic: Food

This East African dish is actually called Ndizi Na Nyama Ndizi is the Swahili word for plantain/banana and nyama is meat in Swahili, and a number of Bantu llanguages across equatorial Africa.  With the popularity of beef and beef stew I suggest using beef in this recipe. In addition to the meat and plantains you have coconut milk, onions, tomatoes and a few other ingredients all combining to make a tasty meal for a Wintertime night.  Enjoy!
