ITALIAN TOMATO SOUP
Your Shopping List
- 2 Tbsp. Olive Oil
- 1 Onion, Medium, Chopped
- 1 Green Pepper, Chopped
- 1 Garlic Clove, Large Minced
- 1 tsp. Dried Oregano
- 2 tsp. Dried Basil
- 1/4 Cup Uncooked Rice
- 1 Cup Canned Diced Tomatos w/some juice
- 4 Cups Chicken Broth
- 4 oz. Pepperoni, Thinly Sliced
- 1/2 Cup Shreaded Provolone Cheese
- 1 Cup Grated Parmesan Cheese

This very tasty soup is excellent and quick and easy to make.
1-Heat the Olive Oil in a large saucepan.
2-Saute the Onion and Green Pepper until softened. Stir in the Garlic and cook for a minute.
3-Add the Oregano, Basil, rice, tomatoes and broth. You may also use 1/2 tsp. of Crushed Red Pepper. (0ptional)
4-Bring to a boil than lower heat to simmer and cover. Cook until rice is tender (about 20 minutes).
5-Stir in the Pepperoni and Cheeses and cook for a few minutes.
6-Serve and add extra cheese if desired. Enjoy.
