A Seafood, full meal salad, great for a ladies luncheon.
1 1/2 lbs. crab (Dungeness, King or Snow) or 12 oz. shrimp, thawed
2 large tomatoes, cut in wedges
2 hard-cooked eggs, cut in wedges
1 cucumber, sliced
1/2 cup ripe olives
Arrange seafood, tomatoes, eggs, cucumber and olives on
lettuce-lined plates attractively;
garnish with lemon. Serve with Louis Dressing.
Makes 4 servings.
1 cup mayonnaise
1/4 cup chili sauce
2 tbsp. chopped green onion
1 tbsp. lemon juice
dash bottled hot pepper sauce.
Combine all and cover; chill. Makes about 1 1/4 cups.
Fluffy Louis Dressing Variation: Beat 1/4 cup heavy cream until soft peaks form;
fold into Louis Dressing. Cover; chill.Makes about 1 1/2 cups.
