Pasta Salad with 
Balsamic Poppy Seed Dressing 


3 c small shell pasta
3 oz cheddar cheese diced into small cubes
½ c + stuffed sliced green olives 
1/3 large red pepper diced finely
5 green onions cut into 1 cm/1/2" pieces
1 celery stalk diced finely

Dressing
2 tbsp balsamic vinegar
2 tbsp orange juice
1 tbsp poppy seeds
1 tsp sugar
½ tsp dry mustard
2 tbsp white wine
2 tbsp oil
¼ tsp salt
1 green onion minced

 

Amount used for wedding for 125 

As Part of Buffet for 120 people 
-Buns, Caesar Salad, Pasta Salad, Marinated Vegetables, Greek Salad, Ham slices (cold), Grand Marnier Chicken with Rice, dills and black olives

15 c shell pasta
15 oz cheddar cheese diced 1/4 inch
2 ½ c stuffed sliced green olives, sliced
2 red peppers diced finely
25 green onions 
5 stalks of celery diced finely

½ c + 2 tbsp balsamic vinegar
½ c + 2 tbsp orange juice
¼ c + 1 tbsp poppy seeds
5 tsp sugar
2 ½ tsp dry mustard
½ c + 2 tbsp white wine
½ c + 2 tbsp oil
1 tsp salt
5 green onions minced

Work required to assemble this dish:

Cook shell pasta - toss with oil.
Dice package of cheddar into tiny cubes (.25"/.5 cm)
Slice stuffed olives
Dice red peppers
Dice stalks of celery
Cut green onions into ¼ - ½ " pieces (sharp knife or scissors?)
