1 pound grated mild OR medium Cheddar cheese (do not use sharp- too oily)
1 pound margarine, slightly softened
18 hot dog buns
In the bowl of an electric mixer at medium speed, beat cheese and margarine until fluffy,
about 10 minutes. Chill slightly to keep it from weeping, but do NOT allow it to become too firm.
Open each hot dog bun and spread a bit of cheese mixture inside. Close the buns and then slice
each bun into 8 pieces. Spread cheese mixture over top and sides of each piece as you would
a petit four. Arrange at least 1/2-inch apart on an ungreased baking sheet.
Refrigerate to chill until firm, about 2 hours.
Preheat broiler. Place rack about 4 inches from heat source.
Broil, watching carefully, just until they begin to turn golden brown and become puffy, 4 to 5 minutes. Do NOT overcook.
TIP: To make ahead of time, chill them until they are firm and then pack them separating by sheets of waxed paper, into an air tight container. If you do this, arrange on baking sheet and let thaw for about 30 minutes before broiling.
