Molasses Raisin Cookies1/2 cup brown sugar - firmly packed 3/4 cup butter - softened 1/4 cup molasses 1 egg 2 1/2 cups flour 1 tsp baking soda 1 tsp ginger 1 tsp cinnamon 1/2 tsp cloves 1/4 tsp salt 1 1/2 cups raisins 3 Tbsp sugar In a large bowl, combine 1/2 cup of sugar, brown sugar, and butter, beating until light and fluffy. Add molasses and egg and beat well. Add flour, baking soda, spices and salt and mix well. Stir in raisins. Shape into 1 inch balls and place 2 inches apart on cookie sheet. Flatten cookies to 1/8 inch using the bottom of a glass that has been dipped into the 3 Tbsp sugar. You may have to lightly grease bottom of glass to pick up sugar. Bake at 325F for 6 to 9 minutes until edges are golden brown. Remove and cool. Makes 3 dozen. |
