Festive Coconut Macaroons


4 egg whites
2/3 cup sugar 1/4 cup flour
1/8 tsp salt
1/2 tsp almond extract
4 cups coconut
1/4 cup chopped red candied cherries
1/4 cup chopped green candied cherries

Heat oven to 325F. Grease and flour cookie sheets.

In a large bowl, beat egg whites until foamy. Add sugar, flour, salt and extract, blending well. Stir in coconut and candied cherries.
Place scant tablespoonfuls 2 inches apart on cookie sheets.
Bake for 13-17 minutes until set and lightly browned.
Remove to cool.
Makes 2 dozen.
