How do you stack a tiered cake?

As far as stacking goes, each cake always goes on it's own cardboard cake circle whether or not you are using pillars and plates or pushin type. after the cakes are iced and smoothed with a paper towel. They sit on their circles while you decorate the tiers. (stacked tiers are to be completely assembled before you start to decorate) To set a tier on top of another...make sure the lower tier ahs got dowel rods for support of course, then slide large spatuala underneath the cake board of the smaller tier and tip it up enough to get your fingers under it. Then, using the spatula and the fingers of your other hand, lift the tier up and place on the base cake. Let it drop the last 1/2 inch or so as you quickly pull your fingers out of the way. If you still get some finger prints in the icing, use your paper towel to smooth them back out as your icing will already b e crusted and set. If the tier is not in the middle and it's buttercream frosted, just place your trusty paper towel between your hands and the cake and push it to the middle. If you mark the center of the bottom tier with the pan you used to bake the upper tier in, that will give you a guide. Of course, if your cake is fondant covered, do all of the above but you won't havr to be careful about the icing....so no paper towel is necessary. ~ Suzy

This is a wonderful explanation! The only thing I would like to add is that I put a cardboard circle on the top of the bottom cake (in the imprint left from the cake pan which is doweled, of course), put some icing on the cardboard to act as 'glue', then when I put the top cake on the bottom one I have a 'guide' showing me where to center the cake. If it's off center a bit I just use the edge of my small spatula to push it where I want it to be. So my cakes sit on 2 layers of cardboard. ~ Judy
