COOKIES


No Bake Cookies
1/2 c. milk
2 c. granulated sugar
1/2 stick oleo
2/3 c. peanut butter
3 c. quick rolled oats
5 tbsp. cocoa

Boil milk, sugar, and oleo for 1 minute. Then mix peanut butter, oats, and cocoa. Mix dry ingredients into liquid well. Drop by spoonfuls on wax paper. If desired, add a few nuts and 1 teaspoon vanilla.

No Bake Orange Cookies
12 oz. pkg. vanilla wafer crumbs
1 c. powdered sugar
3/4 c. chopped nuts
1/4 c. melted margarine
6 oz. can frozen orange juice, defrosted

Mix all ingredients. Form into small balls; roll in powdered sugar. Freeze until ready to serve.

No Bake Cornflake Cookies
1 c. white sugar
1 c. clear light Karo syrup
1 (12 oz.) jar chunky peanut butter
4 c. Special K cereal

Bring sugar and Karo syrup to a boil. Add peanut butter. Pour over 4 cups Special K cereal. Blend. While warm drop by spoonful on waxed paper. Let cool.

Crazy for Craisins Cookie Mix
2/3 cup sweetened dried cranberries (Craisins)
1/2 cup chopped pecans, toasted and cooled
1/2 cup packed dark brown sugar
1 cup baking mix (Jiffy, Bisquick)
1/2 cup packed light brown sugar
1 cup baking mix
Layer and pack ingredients in canning jars in the order listed. Yes, some ingredients are repeated. That's where the layering comes in. Attach following recipe to the jar:

Empty contents of jar into a medium bowl. Stir in the remaining ingredients until well-combined. Shape into 1-inch balls. Place on baking sheets coated with cooking spray (or use parchment paper). Bake at 350 for 8-10 minutes or until cookies are golden brown. Makes 2-1/2 dozen cookies.

Halloween Cookies
Makes about 36 cookies.
Tasty butter cookies cut into pumpkins and other Halloween shapes make festive treats for trick-or-treaters or ghoulish ornaments for a Halloween cookie tree.

1-3/4 cups sifted all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2/3 cups butter at room temperature
1/2 cup granulated sugar
1 egg

Frosting
2 cups confectioners' sugar, sifted
4 tablespoons milk, plus more as needed
food coloring as desired

Preheat an oven to 400 degrees F. Sift the flour with the baking powder and salt together onto a piece of wax paper In a medium bowl, cream the butter and granulated sugar together until light and fluffy. Beat in the egg, then add the flour mixture in thirds, each time stirring until the dough is smooth.

On a lightly floured board, roll the dough to a thickness of 1/8 inch. Cut into desired cookie shapes and put them on an ungreased baking sheet. If you are making cookies to hang on a cookie tree, use an ice pick to make a 1/4-inch diameter hole in each one. Gather up the scraps of dough and roll them out again until all the dough is used.

Bake just until lightly browned on the bottom and pale golden on top, 6 to 8 minutes. Let the cookies cool on the pan for 5 minutes, then transfer them to wire racks.

To make the frosting, put the confectioners' sugar in a medium bowl and stir in milk until a stiff but spreadable paste forms, Though it may seem overly stiff, too much milk will make an unworkable frosting. If more milk is necessary, add only 1/2 teaspoon at a time. Divide the frosting among separate bowls and color as desired. To make an almost black frosting, use equal amounts of red and green food coloring. Frost either warm or cooled cookies. If the cookies are warm, the frosting will spread more easily.

CAPPUCCINO MIX
1 cup instant coffee creamer
1 cup instant chocolate drink mix
2/3 cups instant coffee crystals
1/2 cup sugar
3/4 tsp. cinnamon
1/4 tsp. nutmeg

Combine all ingredients, stirring well. Put about 1/4 cup mix into ziplock snack bags and attach directions if giving individual packets:
Add contents of package to a coffee mug, add boiling water and stir. ENJOY!
If giving a larger amount as a gift, attach these directions to package:
Put 1/4 cup of mix into a coffee mug, add boiling water and stir. ENJOY!
This make two 12- oz containers

Cranberry Harvest Jello Salad
Cranberry Harvest Jello Salad
1 can whole cranberry sauce
1 small can crushed pineapple with juice 1 can mandarin oranges, drained
1/2 cup celery, chopped very fine
1 cup nuts chopped (pecans or walnuts)
1 large box raspberry jello

Dissolve jello in ONLY 2 CUPS boiling hot water. Pour hot jello mixture over cranberry sauce and stir. Add other ingredients and chill.

Potato Babka (potato casserole)
8 medium potatoes, grated
1 medium onion grated
3 eggs well beaten
1 cup hot milk
6 tbsp. melted butter or margerine
salt and pepper to taste
optional (we always fry a few slices of bacon or around easter we put some ham in it)

Mix all ingredients in a bowl, put in a greased baking pan and bake at 350 for 1 hour.

BROWNIES & BARS


Reese's Bars Recipe
2 sticks butter, melted
1 1/2 C. peanut butter
1 1/2 C. graham crackers crumbs
3 1/2 C. powdered sugar

Combine and pat into 9 x 13 pan. Melt 12 oz. milk chocolate chips with 2 T. of oil and frost. Refrigerate.

Applebee's White Chocolate Blonde Brownie with Walnut Maple Sauce
1 cup sifted flour
1/2 teaspoon baking powder
1/8 teaspoon baking soda
1/8 teaspoon salt
1/2 cup chopped walnuts
1/3 cup butter or margarine
1 cup packed brown sugar
1 egg -- beaten
1 T vanilla extract
1/2 cup white chocolate chips

MAPLE BUTTER SAUCE:
3/4 cup maple syrup
1/2 cup butter
3/4 cup brown sugar
1/2 cup walnuts -- chopped (optional)

Preheat oven to 350º.
Sift flour, add baking powder, baking soda, and salt. Sift again. Add chopped nuts. Mix well and set aside. Melt butter. Add brown sugar and mix well. Add egg and vanilla. Blend well. Add flour mixture, a little at a time, mixing well. Stir in white chocolate chips. Spread in a 9x9x2-inch pan. Bake for 20-25 minutes or until toothpick inserted in center comes out clean or with slightly fudgy-looking crumbs. Serve with ice cream and maple butter sauce. Combine syrup and butter, cook over low heat until butter is melted. Stir in brown sugar until dissolved. Add walnuts, if desired.

Makes One 9x9-inch pan Serving Size : 9

Almond Bars
1 pkg. yellow pudding cake mix (2 layer)
1/3 c. margarine, softened
1 c. ground or finely chopped almonds
1 c. powdered sugar
1 tsp. almond extract
4 egg whites
1/2 c. chopped almonds

Heat oven to 350 degrees. Grease a 13 x 9 inch pan. In large bowl, combine cake mix and margarine at low speed until crumbly. Reserve 1/2 cup crumbs for topping. Press remaining crumbs in bottom of prepared pan. In same large bowl, beat ground almonds, powdered sugar, almond extract and egg whites on highest speed for 4 minutes. Pour evenly over crumbs. Combine 1/2 cup reserved crumbs and chopped almonds; sprinkle over egg white mixture. Bake for 20 to 30 minutes or until light golden brown. Cool. Cut into bars.

OTHER DESSERTS


Baked Bananas with Yummy Sauce
2 bananas
1/2 cup pineapple juice
1 tbsp brown sugar
1/2 tbsp cornstarch
1 tbsp coconut shreds

In a saucepan, combine the pineapple juice and brown sugar, and heat to simmering. On the side, mix the corn starch with a small amount of cold water, then add it to the simmering juice mixture. Stir continuously until the sauce thickens (about 2 minutes).

When the sauce is ready, place peeled bananas in the bottom of a greased loaf pan. Pour the sauce over the bananas, then sprinkle the shredded coconut over top. Bake at 350F for 30 minutes.

APPETIZERS


Cocktail Smokies
1 1/2 cups ketchup
1/4 cup brown sugar
1/4 cup whiskey
1 package cocktail wieners

Combine the ketchup and brown sugar in a saucepan. Cook on low heat until the sugar dissolves. Add whiskey and hot dogs. Remove from heat. To serve, place in a warming dish or Crock Pot. Serve with toothpicks
