What is crumb coating? Why is it done and how is it done?

Crumb Coating to me means to seal in the crumbs to keep them from getting into your frosting- finished product. I do a thin coating of the same buttercreme frosting I will be using on the cake. I have also used an apricot glaze. You just brush it on the cake while it's still hot. Let it dry. The glaze will dry to a hard finish in 15 min. or less. The easiest way to make a apricot glaze would be to heat a jar of preserves to a boil, then strain. while its still hot you then brush it on the cake. ~ Linda

Crumb coating is a thin buttercream spread very thinly, like buttering toast, that seals the cake and keeps the moisture in as well as locking the crumbs into place. It doesn't matter if you get crumbs in it, they won't show when you put the final layer of icing on. The cake must be completely cooled (at least a couple of hours) before you put it on or the heat will melt it and change the consistancy, making it soupy. Your final icing won't stick to that. ~ Bitte
