
Shrimp Quiche
1 (8 inch)
pie shell - unbaked
2 eggs
1 cup half and half
1 teaspoon salt
1 dash cayenne pepper
3 ounces Swiss cheese - grated
3 ounces Greyere Cheese
1 Tablespoon all-purpose flour
1 cup chopped shrimp
Note: You may also substitute flaked crabmeat or tuna for this
recipe
Prick bottom and sides of pie crust with a fork in several places. Bake at 450 degrees for ten minutes or until a very light golden brown.
Whisk together eggs, half and half, salt and cayenne pepper. In a seperate bowl combine cheeses, flour and shrimp and distribute evenly in bottom of prepared pie crust. Pour liquid mixture over shrimp and cheese mixture.
Bake at 325 degrees for 45 minutes to an hour or until a knife inserted into the center comes out clean.
Cut into small wedges. Serves 6 - 8
