Scottish Recipies
Here is one of my Favourites, easy to make and smell great while baking in the oven.. mmm... quick get the
tea on... you can also omit the raisins if you like but they taste better with them I think...
Famous Rich Tea Scones
Oven Temp: 425F(220 c)-450F(230 c)
Baking Time:15-20 mins.
8 ozs (1 cup) Self Raising Flour
1/2 tsp salt
1 1/2 ozs(1 1/2 cups) margarine
1 ozs (1 cup) sugar
2 tblsp raisins
1 egg & milk to make 150ml
**KEEP EGG & MILK MIX FOR TOP OF THE SCONES**
-Preheat your Oven
-Mix flour and salt in a bowl, rub in margarine to make breadcrumbs
-Mix in sugar and Raisins
-Set aside the mixture
-In another bowl, beat egg and milk together, then add your dry ingredients to make a soft dough
-turn on to floured surface and roll to half inch thickness
-cut out and place on greased baking tray
This version of the Short bread is Scottish, I also have another version, they both taste great.. try both and you'll
be able to choose which one you like...
Oven Temp:450F(230 c)
Baking time:10 mins
16 ozs(2 cups) flour
1 tblsp sugar
1/2 tsp baking powder
1/2 tsp salt
4 tblsp cold unsalted butter
8 ozs (1 cup) milk
-Preheat your Oven
-Lightly grease cookie sheet and set aside
-Mix flour,sugar,baking powder and salt into a large bowl
-stir with fork until well blended
-using pastry blender or 2 knives, cut in butter until it resembles course meal
-drop dough by heaping tblsp 2 inches apart
-bake until golden brown
Here's the other version, this one is easy to do as well... Great for the Christmas Holidays too infact all year round..
Oven Temp:300F(150 c)
Baking time:10-15 mins
1/2lbs Unsalted butter
1/2 cup Sugar
2 cups Flour
-Preheat your Oven
-Soften Butter in a bowl with wooden spoon, until fluffy and creamy
-mix in sugar
-gradually add in your flour until mixture is moist and not too dry
-roll into a log, using a knife, cut 2inches apart for easy cookies
-place 2 inches apart on cookie tray and sprinkle either icing sugar or granulated sugar on top
-bake for 10-15 mins in oven
There you have it, two versions of the "ShortBread" cookies, mmm I can almost smell them... great with a cup
of tea...
