Wanda's Maple Orange Bread Pudding

6 Slices of any kind of bread
1 cup of grated orange rind
2 eggs
1 1/2 cups yogurt (plain or vanilla) or 1 1/2 cups of regular milk
1/4 tsp. nutmeg
1/4 tsp. cinnamon
2 to 3 Tbsp. of maple syrup or maple sugar
8 oz. walnuts

Oil lightly a 9x11 glass pan Preheat oven at 350*
F.. Butter lightly your 6 slices of bread and lay in
your pan. Then sprinkle your grated orange over your
bread. Then in a bowl mix your 2 eggs, 1 1/2 yogurt or
milk, 1/4 teas nutmeg and cinnamon. When this is
mixed then pour this over the bread in your pan make
sure to cover all ingredients. Then sprinkle with
whole nuts or broken nuts. Then drizzle Maple Syrup or
sprinkle brown sugar over the top of that and bake at
350* F. at 30 or more minutes or until it gets custard
like. Then let it cool cut into squares serve with
whipped cream or ice cream.

Grandma's Persimmon Pudding

Dry Ingredients:
1 C. Flour
1/2 tsp. Salt
1 tsp. Cinnamon
1 tsp. Baking Powder
1 tsp. Soda
2/3 C. Sugar

Add:
1 egg, well beaten
1/4 cup Milk
1 Cup Persimmon Pulp, blended, w/ skin
1 Tablespoon Vanilla

Mix dry ingredients together. Mix wet ingredients
together EXCEPT THE BUTTER. Mix wet and dry together
thoroughly. Stir in the melted butter. Bake at 350
degrees in greased 8x8x2 pan, or 8 inch round cake pan
for approx 40-45 minutes. DO NOT OVERBAKE.

Sauce:
1 Cup Sugar
1/8th tsp. salt
2 Tbsp. Flour
Dash Nutmeg
1/4 cup Melted Butter (but NOT Hot!)

Mix dry ingredients VERY well. Stir into 1 1/4 Cup
boiling water. Add 2 Tbsp. butter to boiling water.
Stir fast, cooking at boiling until clear,
approximately 5 minutes. Add 1/2 tsp. nutmeg after
done. Serve with Nutmeg sauce and dab of whipped
cream on top.

Jaggery Pudding

Ingredients:
10 Eggs
2 ½ Cups thick Coconut milk
1 lb Jaggery
Pinch of Cinnamon, Nutmeg & Salt
½ tsp Cardamom

Directions:
Beat the eggs well.
Grate the jaggery and mix with the egg batter.
Add all the other ingredients and mix well.
Pour the mix into a greased bowl.
Cover with oil paper & steam for 1 1/4 hrs.
Let it cool in the container before serving.
Sprinkle some chopped cashews for added taste and
decoration.
