Key Lime Pie
1 can condensed milkMix milk, 4 egg yolks and lime juice. Beat 1 egg white
stiff. Fold into mixture. Pour in pie shell. Beat 3
egg whites and gradually add sugar and cream of
tartar. Put in pie shell and bake at 350 until golden.

Shoo Fly Pie
unbaked pie shell
1/4 c. shortening
1 1/2 c. flour
1 c. brown sugar
3/4 tsp. baking soda
1/8 tsp. nutmeg
a little ginger, cinnamon and cloves
1/4 tsp. salt
3/4 c. molasses
3/4 c. hot water
Work shortening, flour and brown sugar together, set
aside. Mix remaining ingredients together well and add
hot water. Layer the crumb mixture and liquid in
alternate layers with crumbs on bottom and top of
pie. Bake 15 minutes at 450F, then 20 minutes at
350F.

Very Cherry Pie
4 cups frozen unsweetened tart cherries
1 cup dried tart cherries
1 cup sugar
2 Tbsp. quick-cooking tapioca
1/2 tsp. almond extract
Pastry for double -crust 9-inch pie
1/4 tsp. ground nutmeg
1 Tbsp. butter
Combine frozen cherries, dried cherries, sugar,
tapioca and almond extract in large mixing bowl; mix
well (don't thaw frozen cherries). Let cherry mixture
stand 15 minutes.
Line 9-inch pie plate with pastry, fill with cherry
mixture. Sprinkle with nutmeg. Dot with butter. Cover
with top crust, cutting slits for stream to escape.
Bake in preheated 375º oven for one hour.
