Artichoke Tomato Alfredo

one can artichokes (not packed in oil)
4-5 fresh tomatoes, chopped into large chunks
1 medium onion, chopped fresh garlic (or 1 T garlic powder)
1/2 cup fresh basil, chopped (or 3 T chopped dried basil)
2 T whole wheat flour
1/2 cup (or more) non-fat Soy Moo or low-fat soy or rice milk

Prepare fettucini, macaroni or spaghetti noodles al
dente. Place onion, tomato, garlic and basil in a non-
stick pan and saute in a little the of the liquid from
the can of artichokes. Cut the artichokes into small
pieces. Add the artichokes (and liquid) into the
saute with a little flour to thicken. Mix thoroughly,
adding soy or rice milk and flour to desired
thickness. Don't cook the artichokes for long, just
enough heat all ingredients and to blend sauce to
desired thickness. Top the pasta with the artichoke
sauce.

Curry-Chicken-Rice

6 skinless, boneless chicken tighs
s Garlic, Italian Spices, Curry
Rice (6 cups)
Olive Oil
1) Marinate the chicken at least 1 hour in advance. I
use anything I find in the kitchen cabinet (garlic,
salt, pepper, Italian spices, curry).
2) Rinse the rice and reserve.
3) Heat 5 teaspoons of Olive Oil in a large pan
4) Kinda of half stir-fry the chicken
5) Add the raw rice and kinda stir fry it with the
chicken
6) Add boiling water (about 1.35 times the amount of
rice)
7) Cook in low-medium for 20 minutes
8) Let it rest for 10 more minutes

Curry Rice

Ingredients
Rice 2 cups
Chicken 1/2 lb.
Potato 1
Carrot 1
White Onion 1
Curry Mix
Water
Cooking Spray

1. Cut into medium pieces chicken, potato, carrot and onion.
2. Spray a skillet with cooking spray and pre-heat. Add vegtables and stir fry for about five minutes, lightly browning.
3. In a second skillet, repeat step #2 with the chicken, being careful not to overcook.
4. In a large pot, add chicken, vegtables and 2 cups water.
5. Cook over medium heat for 20 minutes.
6. Shut off heat, add curry and stir until well mixed. Simmer over low heat for 20 minutes.
7. While the curry is simmering, prepare rice according to package directions (a rice cooker is the best way).
8. Pour curry mix over rice and enjoy!
