Surprise Burgers

Hamburger (enough for two patties ea.)
Potato, diced
tomato, diced
onion, diced
cheese, diced
broccoli, diced
cauliflower, diced
salt & pepper, enough to season

Make two thin hamburger patties per serving. Place one
of the patties on a large piece of heavy duty aluminum
foil. Add a small amount of the other ingredients in
the center of the patty. Use the second patty as a
cover over all the ingredients. Salt and pepper the
patties and vegetables. Pinch the edges of the two
patties together. Cover securely with the aluminum
foil. Place on a grill or in the coals of a campfire.
After about 1/2 hour remove from the heat source and
serve.

 

Italian Hamburgers

6 Tbsp. dry bread crumbs
1/3 C. chopped onions
1/3 C. chopped green pepper
1 garlic clove, minced
3/4 tsp. dried oregano
1/4 to 1/2 tsp. salt
1/4 to 1/2 tsp. pepper 1 pound ground beef
6 Tbsp. grated Parmesan cheese, divided
1 can (15 oz) tomato sauce
3/4 tsp. Italian seasoning
Hot cooked spaghetti, optional

Combine the first seven ingredients. Add beef and 3
Tbsp. of Parmesan cheese; mix well. Shape into 6
patties. In a skillet, brown patties for 2 minutes on
each side. Combine the tomato sauce and Italian
seasoning; pour over patties. Reduce heat; cover and
simmer for 10-15 minutes until meat is no longer
pink. Sprinkle with remaining Parmesan. Serve patties
and sauce over spaghetti if desired.
Yield: 6 servings.

 

Giant Oven Burger

1-1/2 pounds extra-lean ground beef
1/2 cup chopped bell pepper (about 1 small)
1/4 cup chopped onion (about 1 small)
1 tablespoon prepared horseradish
1 tablespoon prepared mustard
1/2 teaspoon salt
1/3 cup chile sauce or ketchup
1 unsliced round loaf Italian or sourdough bread,
8 inches in diameter

Heat oven to 350 degrees. Mix all ingredients except
chile sauce and bread. Press beef mixture in ungreased
pie plate, 9 X 1-1/4 inches. Spread chile sauce over
top. Bake uncovered 45 to 50 minutes or until no
longer pink in center; drain. Let stand 5 minutes. Cut
bread crosswise into halves. Carefully place burger
between halves. Cut into wedges.
