Ricotta Pancakes To 1 c. ricotta gradually beat in 4 eggs, 2 egg whites, 1/2 t. vanilla, pinch salt, 2 t. Splenda, 1 T. oil, pinch nutmeg, 1/3 c. oat flour. Cook on griddle like a pancake. Top with butter or margarine and sugar-free syrup of your choice.
