Tomato Cheddar Couscous

1 large tomato, skinned and chopped
1 cup water
1 tsp. garlic
1 Tb. cilantro, fresh or dried
1/3 cup white wine
1 cup uncooked couscous
salt and pepper
1/4 cup cheddar cheese, grated
1/2 cup grated Parmesan cheese
5 leaves fresh basil, chopped

In a pot, cook the tomato with water, white wine, garlic and cilantro. Mash the mix with a potato masher then strain. Put liquid back into pot and add the uncooked couscous. Mix until doubled in size and has soaked up most of the tomato liquid. Take off the heat and add the cheeses, salt, pepper and basil. Let sit covered until ready to serve.
