1 green scallion, diced
3 tsp. Worchestire Sauce
3 large lemons, squeezed
4 Tbs. oil
6 Tbs. red wine vinegar
1/2 lb. fresh mushrooms, diced
6 slices bacon, fried and diced
1/4 cup swiss cheese, cut into small sticks
1 lb. fresh spinach

Wash the spinach leaves well. Pat dry and tear into bite sized pieces. Mix all the wet ingredients together. Pour over spinach. Add bacon, mushrooms and cheese and toss. Serves 6.
