Pasta & Spinach

1 bag of fresh spinach, remove stems and shred
Cooking wine
Freshly chopped garlic as much as you can stand
2 chopped mushrooms
Grated Monteray Jack Cheese
Olive Oil
1 lb. Ziti or Rigatoni pasta, cooked

Add a good amount of olive oil, enough to coat the whole skillet. Combine spinach, mushrooms & garlic into skillet. I use some cooking wine with the olive oil to cook down the spinach. Takes about 5-10 minutes to cook all of the spinach down. Spread over pasta. Add cheese. Never use frozen spinach because it tastes like plastic. Goes good with a fruity blush or robust red wine.
