16 oz flavored fettuccini (red pepper or spinach-or any kind- you can find this in any pasta section of the supermarket), cooked according to directions Steam the vegetables (you can add in or take away any that you would like).Saute the shrimp with the lemon, garlic and 1/3 of the cup of olive oil in pan for about 5 minutes on Medium heat or until shrimp is pink. Cook the pasta and toss with the vegetables and shrimp with the rest of the olive oil and add the Parmesan cheese.
1/2 cut red pepper
1/2 cut yellow pepper
1/2 cut green zucchini
1 whole cut yellow squash
1 cup of chopped portabello mushrooms
1 lb. shrimp, peeled, cleaned and deveined
1 clove garlic, minced
1 cup olive oil
1 Tb. lemon juice
2 cups fresh grated Parmesan cheese
