Curry Chicken

3 lbs. Chicken
2 Tbs. curry powder
1 medium onion thinly sliced
1 clove of garlic
2 sprigs of thyme
black pepper & salt to taste
lemon or lime juice

Clean, remove skin, and cut chicken in small pieces, then wash with lime or lemon juice Drain, season with curry, onion, thyme, garlic, pepper, salt and let marinate for awhile. In a skillet pour about 2 tablespoons of oil. Let oil heat but not too hot. Add everything, reduce heat, add a 1/2 cup of water and let cook until done. Stir occasionally and add more water as needed. Serve over rice

This version of curried chicken does not work well with boneless chicken as it will cook too quickly and not give enough "simmer time" for the flavors to meld.
