While this salad is quite mundane, it is fundamental to replicate the traditional Ethiopian restaurant experience. [ Be careful of the hot peppers and do not substitute the salad dressing. ]What You Need:
- iceberg lettuce, chopped
- tomato, chopped
- jalapeņo pepper, sliced thinly (with seeds)
- onion, chopped (optional)
- Italian salad dressing from a bottle or mix
What You Do:
- Combine the vegetables, dress and toss.
- Serve on injera, with collard greens and stew.

2 eggplants, peeled, diced Salt, Pepper Juice of 1 lemon 1/3 cup olive oil 2 cloves garlic, minced 3 cup cooked black-eyed peas 2 teaspoons sugarPlace the diced eggplant in a bowl.
