Ethiopian Camel Basher recipeLab - Ethiopian Cottage Cheese and Yogurt
Scale ingredients to servings
1 part Orange Juice
1 part Vodka
1 dash Grenadine
Grenadine will sink to the bottom of the glass. The dash should be just enough to give a thin layer. Mix thoroughly. The correct mix will give a drink which is between pink & orange in color, but not one nor the other.
Serve in: Beer Mug
Alcohol (ABV): 19% (39 proof)
Ethiopian Punch recipeScale ingredients to servings
1 cup Raspberry Syrup 1 cup Maraschino Cherry Juice 1 cup Orange Juice 1 cup Lemon Juice 1 cup Pineapple Juice 1 cup Grape Juice 2 1/2 qt 7-UpCombine ingredients in a punch bowl, serve with plenty of ice, and garnish with orange slices.
1 lb Small-curd cottage cheese, or Farmer cheese 4 tbl Yogurt 1 tbl Lemon rind, grated 1 tbl Salad herbs 2 tbl Chopped parsley 1 tbl Salt 1/4 tsp Black pepperYield: 1 quart
Combine all ingredients in 1 quart bowl.
The mixture should be moist enough to spoon but dry enough to stay firm when served. Drain off excess liquid. One or two heaping tablespoons of lab is placed on the injera before each guest.
NOTES : IAB is a white cured cheese very much like the greek feta. Special herbs are added(and sometimes chopped vegetables)which gives it its characteristically acid taste. Since the cheese used in Ethiopia is not avaialble here, this recipe is an attempt to simulate lab.
