Sweet Potato Casserole

  • 4 medium to large size sweet potatoes
  • 2 eggs, lightly beaten
  • 1/4 cup evapoated milk
  • 1 tsp. vanilla
  • 3/4 cup granulated sugar
  • 1/2 tsp. salt
  • 2 tsp. butter or margerine


  • 1 T. butter
  • 3/4 cup light brown sugar
  • 1/2 cup flour
  • 1 cup chopped pecans or walnuts

    Preparation -
    Peel, cut, and cook the sweet potatoes until tender. Combine the cooked sweet potatoes with the eggs, milk, vanilla, sugar, salt and butter in a large bowl. Mix with an electric mixer or use a food procesor to blend the ingredients together. Pour the mixture into a buttered casserole dish. Bake in a preheated oven at 350 for 20 to 25 minutes. Remove from the oven. Set the oven temperature to 375.

    Prepare the topping... In a mixing bowl, cut the butter into the sugar and flour. Stir in the chopped nuts. Sprinkle the topping mixture over the baked sweet potato mixture. Return to the oven and bake for 6 to 8 more minutes.
