Spinach Quiche

  • 1 pkg. frozen chopped spinach
  • 1 - pkg. (8 oz.) cream cheese, regular or fow-fat, softened to room temperature
  • 4 large eggs - beaten
  • 4 oz. shredded swiss cheese
  • 1/4 tsp.salt
  • 1/8 tsp. pepper
  • 1 unbaked 9" pie shell
  • dash of nutmeg
  • 1/4 cup grated parmesan cheese

    Preparation -
    Cook the spinach as directed on the package. Drain the water off the cooked spinach. Blend the cream cheese and cooked spinach together. Allow the mixture to cool for about 10 minutes. Add the beaten eggs, salt and pepper and mix well. Place the shredded swiss cheese in the bottom of the pie shell. Pour the egg/spinach mixture over the shredded cheese. Sprinkle the nutmeg and grated Parmesan cheese on top. Bake in a preheated oven at 350 for 35 to 40 minutes or until the center is set.
